If you’d like to make your own Anna-style buttercream-finish cakes, then this is the class for you. During this one-day course, you will learn all about making a flawless buttercream layer cake, as well as an on-trend ganache drip finish. Decoration techniques like layering, masking, creating buttercream watercolour effects and buttercream piping will all be covered.

The sponges will be pre-baked for you, in order to concentrate on the layering & decoration techniques, but you will learn all the secrets to Anna’s classic celebration sponge with a full demo. We will cover how to make a super-easy fresh raspberry jam for layering, as well as making buttercream for layering, masking and piping. You will trim and layer your cake for a perfectly level finish, and work with coloured buttercream to create the latest watercolour technique.  You will then finish your cake with contemporary coloured ganache drips, before topping with buttercream rosebuds, peaks and macarons.

The cake flavour will be lemon & raspberry, with lemon, raspberry & rose as an additional option.

The class is offered in small groups (max 6 students), so you can benefit from plenty of tutor attention. Taking place in Anna’s professional kitchen in the café, the course includes complimentary tea & coffee.

You will take home your own 6″ layer cake, gift-boxed, plus all the recipes used in the class and plenty of tips and skills for making your own cakes at home.

You will learn the following techniques during the class:

– Baking a creamed method cake (demo only)

– Making, flavouring and colouring English buttercream

– How to make a simple raspberry jam

– How to trim, layer and mask a sponge cake

– Finishing a buttercream cake with a watercolour effect and coloured ganache drips

– Piping with buttercream – peaks and rosebuds

* Due to timings & quantities, some of the class will involve pair work
